    Ingredients: - 1 can chickpeas (drained & rinsed) - 1/4 tsp baking soda - ½ cup tahini - Juice of ¾ lemon - 1 small garlic clove - 4 tbsp olive oil - ½-1 tsp salt - 2 tbsp iced water Garnishes: - Toasted pine nuts - Fresh parsley - Paprika - Sumac Instructions: 1. Add chickpeas and baking soda to a saucepan. Cover with water, bring to a boil, and cook for 20 minutes until soft. Drain and rinse with cool water. 2. In a food processor, combine lemon juice, garlic, and salt. Let it sit for 5-10 minutes to mellow the garlic flavour. 3. Add tahini to the processor and blend until smooth and creamy. 4.     Crumble (for base + top): - 1 cup granola - 1.5 tbsp butter or ghee Milk Pudding: - 1.5 cups soy milk - 2.5 tbsp cornstarch - Orange zest** - 1.5 tbsp Monk Fruit Brown Sugar replacement - Optional: shredded cheese (e.g., mozzarella) Instructions: 1. Combine a little soy milk with cornstarch to dissolve completely first, before adding the rest of the milk in. Do this step before turning on the heat!! 2. Add the rest of the soy milk to the cornstarch mixture and heat gently, stirring continuously to thicken. 3. Once thickened, add the sugar and continue to stir until fully incorporated. If using cheese, add it here for extra creaminess. 4. **For orange zest: If you don’t have fresh orange zest, you can use dried orange slices to infuse in the milk instead of fresh zest.* 5.
